Easy Pumpkin Pancakes

These easy pumpkin pancakes are extra fluffy and delicious! This 3-ingredient recipe is quick, nutritious and meets all of your pumpkin spice dreams.

Equipment

  • Measuring Cups
  • Mixing Bowl
  • Cake Pan (mine was 9 x 9 inches)

Ingredients

  • 2 cups Kodiak Cakes pumpkin flax mix
  • 2 cups water
  • 4 tbsp mini chocolate chips
  • 2 tbsp natural peanut butter or pumpkin peanut butter

Instructions

  • Preheat oven to 350 degrees.
  • Mix 2 cups of Kodiak Cake mix with 2 cups of water.
  • Stir in 2 tbsp of mini chocolate chips.
  • Line the cake pan with parchment paper or grease well with cooking spray.
  • Pour mix into the cake pan.
  • Bake at 350 degrees for 10 minutes, then sprinkle with remaining mini chocolate chips.
  • Continue baking for another 10 minutes or until the top is light brown and the pancake is baked all the way through.
  • Take the cake pan out of the oven.
  • Drizzle peanut butter on the baked pancakes.
  • Cut into pieces and enjoy!

Notes

Note: I used the Buttermilk Power Cakes mix, but you can use whatever Kodiak Cakes mix you can find! Every single flavor will turn out amazing.
