Raspberry Pancake Bites

These raspberry pancake bites are a delicious and healthy breakfast idea! This 3-ingredient recipe is perfect for meal prep and busy mornings.

  • 2 cups pancake mix I use Kodiak Cakes Mix, buttermilk or dark chocolate work great!
  • 1.5 cups water
  • 1 cup raspberries chopped

For Topping

  • syrup
  • whipped cream


  • Preheat oven to 350 degrees.
  • Spray muffin tin with cooking spray and set aside.
  • Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
  • Chop the raspberries into small pieces.
  • Mix ½ of the raspberries into the batter and stir.
  • Pour batter evenly across the 12 spaces of the muffin tin.
  • Sprinkle the remaining ½ of the raspberry pieces on top of the muffins.
  • Bake at 350 for about 20 minutes, or until middle is cooked through.
  • Enjoy with a side of syrup or topped with whipped cream!
