Gather the necessary ingredients for this recipe.
Preheat oven to 350 degrees.
Use cooking spray to grease a casserole dish. Set aside.
Prepare the gravy according to the directions on the package.
(Usually to prepare the gravy, stir water and gravy mixture together in a sauce pan. Stir together with a whisk. Heat over medium heat and stir frequently until gravy comes to a boil. Reduce the heat and let it simmer for a minute. Gravy will thicken upon standing.)
Heat a skillet over medium heat. Add turkey breakfast sausage and use a spatula to break into crumbles. Cook until crumbles are browned.
Cut the biscuits into ¼ size pieces.
Line the biscuit pieces on the bottom of the casserole dish.
Add 1 cup of egg whites into the gravy mixture. Stir until combined.
Pour the gravy and egg white mixture over the biscuit pieces.
Evenly distribute the turkey crumbles on top of the mixture.
Sprinkle the shredded cheese on the very top.
Bake at 350 for about 30 minutes or until biscuits are lightly brown on the bottom.
Take out of oven and let cool.
