Jalapeno Cheddar Cornbread Muffins

  • 1 box cornbread mix I used Kodiak Cakes
  • 1 cup shredded cheddar cheese
  • ½ cup jalapenos seeds taken out, diced


  • Preheat the oven to 350 degrees.
  • Grease a muffin tray and set aside.
  • Slice the jalapenos and take out the seeds. Dice the jalapenos.
  • In a large bowl, make the cornbread batter following the instructions on the box. Mix well.
  • Fold in ½ of the jalapenos and ½ of the shredded cheese into the batter.
  • Evenly distribute the batter into 12 muffin spaces.
  • Sprinkle the remaining cheese and jalapenos on top of each muffin.
  • Bake for 30 minutes (or whatever the directions for the muffin mix you used say).
  • Take out of the oven, smear with butter, and ENJOY.
