Berries and Cream Pancake Skillet

This berries and cream pancake skillet is an easy, delicious, high-protein breakfast! It's made in one skillet and ready in 15 minutes.

  • Cast Iron Skillet (mine is 12 inches)


For the Pancake

  • 2 cup Kodiak Cakes mix
  • 2 cup water
  • 1 cup mixed berries

For the Icing

  • ¼ cup greek yogurt
  • ¼ tsp vanilla
  • 2 tbsp confectioner's sugar


  • 2 tbsp butter (for the cast iron skillet)


  • Preheat oven to 350 degrees. Put the cast iron skillet in the oven while it is preheating.
  • Mix 2 cup of Kodiak Cake mix with 2 cup of water.
  • Stir in ½ cup of mixed berries.
  • Once oven is preheated, take out the cast iron skillet.
  • Melt 2 tbsp of butter into the skillet. Spread it around so it covers all of the surfaces.
  • Pour mix into the skillet.
  • Bake at 350 degrees for 5 minutes, then sprinkle with remaining mixed berries.
  • Continue baking for another 7 minutes or until the top is light brown and the pancake is baked all the way through.
  • Prepare the icing by adding greek yogurt, vanilla, and confectioner's sugar into a bowl and stirring together until well combined. Place in fridge until ready to use.
  • Take the skillet out of the oven and let cool.
  • Drizzle icing on the pancake.
  • Cut into pieces and enjoy!
