Easy Skillet Chicken Fajitas

– 1.5 lbs chicken breast  – 2 tbsp olive oil – 3 bell peppers  – 1 onion  – 1 lime juiced – ¼ cup cilantro  – fajita seasonings

– Add all seasonings to a small bowl. Mix & sprinkle on the chicken. Set aside. – Chop the bell peppers and onion into very thin slices.  – Heat a large skillet over medium heat. – Add olive oil to skillet. Cook chicken for about 7 mins on each side.

– Add the peppers and onions to the skillet.  – Cook for about 7 minutes. – When vegetables are finished cooking, add the sliced chicken to the skillet. – Squeeze the lime juice over the top. – Sprinkle with cilantro. – Serve with tortillas, tortilla chips, salsa, greek yogurt, cheese, or whatever you like with tortillas!

Instructions

Quick, easy, and delicious! We made these for dinner last night, and they did not disappoint. I had it over rice (I'm gluten-free), and my husband made a big 'ole burrito topped with salsa and cheese. It was perfectly seasoned! Definitely going into our dinner rotation.
