Bacon Cheddar Muffins
Name a better duo than bacon and cheese... I'll wait. These bacon cheddar muffins are a quick and easy 3-ingredient recipe perfect for a busy morning!

pancake mix
I use Kodiak Cakes Mix
1.5

water

bacon
chopped
¼
cup
cheddar cheese
shredded

Instructions
Preheat oven to 350 degrees.
Spray muffin tin with cooking spray and set aside.
Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
Chop bacon into small pieces.
Mix ½ of the bacon pieces and cheese into the batter and stir.
Pour batter evenly across the 12 spaces of the muffin tin.
Sprinkle the remaining ½ of the bacon and cheese on top of the muffins.
(Note: If you want more bacon or cheese, ADD IT.)
Bake at 350 for about 20 minutes, or until middle is cooked through.
Enjoy with a side of syrup!
