Ingredients

  • 6 large russet potatoes
  • 6 servings bbq pulled pork
  • bbq sauce
  • shredded cheese
  • sour cream or greek yogurt
  • green onions
  • jalapenos
  • bacon pieces
  • olive oil
  • salt

Instructions

  • Make the easy bbq pulled pork.
  • Preheat the oven to 400 degrees.
  • Wash and dry the potatoes. Use fork to poke holes all over the potatoes.
  • Use your hands to rub olive oil on the potatoes. Sprinkle with salt and pepper.
  • Bake the potatoes for 1 hour, until tender (you can test with a fork).
  • Slice the potatoes open and layer with toppings.
  • Add pulled pork, cheese, greek yogurt, bacon, green onions, bbq sauce, and whatever else you want.
  • Makes 6 servings.
