Berries and Cream Pancake Skillet

For the Pancake
- 2 cup Kodiak Cakes mix
- 2 cup water
- 1 cup mixed berries
For the Icing
- ¼ cup greek yogurt
- ¼ teaspoon vanilla
- 2 tablespoon confectioner's sugar
Other
- 2 tablespoon butter (for the cast iron skillet)
Preheat oven to 350 degrees. Put the cast iron skillet in the oven while it is preheating.
Mix 2 cup of Kodiak Cake mix with 2 cup of water.
Stir in ½ cup of mixed berries.
Once oven is preheated, take out the cast iron skillet.
Melt 2 tablespoon of butter into the skillet. Spread it around so it covers all of the surfaces.
Pour mix into the skillet.
Bake at 350 degrees for 5 minutes, then sprinkle with remaining mixed berries.
Continue baking for another 7 minutes or until the top is light brown and the pancake is baked all the way through.
Prepare the icing by adding greek yogurt, vanilla, and confectioner's sugar into a bowl and stirring together until well combined. Place in fridge until ready to use.
Take the skillet out of the oven and let cool.
Drizzle icing on the pancake.
Cut into pieces and enjoy!
