Ingredients

  • 1 lb turkey breakfast sausage (16 oz)
  • 1.5 cup egg whites (368 grams)
  • 1.5 cup nonfat cottage cheese (342 grams)
  • 4 cups hash browns (12 oz)
  • ½ cup cheddar cheese shredded (56 grams)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • optional if you want a kick: ¼ teaspoon cayenne

Instructions

  • Preheat oven to 375 degrees.
  • Spray a 9x13 casserole dish with cooking grease. Evenly distribute the hashbrowns into the casserole dish. Set aside.
  • Heat a skillet over medium-high heat. Brown turkey sausage and drain excess grease from skillet.
  • Add the cooked turkey sausage on top of the hashbrowns.
  • In a blender, add egg whites, cottage cheese, and seasonings. Blend until creamy.
  • Pour the egg mixture into casserole dish. Use a spoon to spread evenly.
  • Sprinkle cheese as the top layer.
  • Bake at 375 for 40 mins.
  • Enjoy!
