Breakfast Quesadillas (4 Easy Ways!)

Ingredients

Bacon, Egg & Cheese Breakfast Quesadilla

  • 2 tortillas (I use Mission carb balance tortillas)
  • 2 eggs
  • 2 slices bacon cooked
  • ¼ cup shredded cheese cheddar, pepperjack, or mexican
  • salt & pepper
  • toppings: cilantro, avocado, & salsa

Sausage, Egg, & Cheese Breakfast Quesadilla

  • 2 tortillas (I use Mission carb balance tortillas)
  • 2 eggs
  • 2 oz breakfast sausage cooked
  • ¼ cup shredded cheese cheddar, pepperjack, or mexican
  • salt & pepper
  • toppings: cilantro, avocado, & salsa

Bean, Cheese, & Egg Breakfast Quesadilla

  • 2 tortillas (I use Mission carb balance tortillas)
  • 2 eggs
  • 2 oz refried beans
  • ¼ cup shredded cheese cheddar, pepperjack, or mexican
  • salt & pepper
  • toppings: cilantro, avocado, & salsa

*Macro-Friendly* Breakfast Quesadilla

  • 2 tortillas (I use Mission carb balance tortillas)
  • ½ cup egg whites
  • ¼ cup turkey sausage cooked (I use Jimmy Dean brand)
  • ¼ cup low-fat shredded cheese cheddar, pepperjack, or mexican
  • salt & pepper
  • toppings: cilantro, avocado, & salsa

Instructions

  • Gather ingredients for the kind of breakfast quesadilla you plan to make.
  • If meat is not yet cooked, start by heating a skillet over medium heat. Spray with cooking grease and cook meat (bacon, breakfast sausage, turkey sausage, etc) until cooked through. Set aside until ready to use.
  • Use a paper towel to wipe off the skillet and heat over low-medium heat. One heated, spray with cooking grease.
  • In a small bowl, whisk together 2 eggs with salt & pepper (optional: hot sauce for a little extra kick).
  • Pour the eggs into the skillet. Cook on low until the eggs are cooked through. (My favorite method of cooking eggs is to use a spatula to gently push the outside of the eggs to the center, repeating until eggs are cooked). While the eggs are cooking, assemble your quesadillas.
  • To assemble the quesadillas, start by laying down one tortilla. Sprinkle with part of the cheese, add the cooked meat (or beans), cooked eggs, then more cheese. Place the second quesadilla on top.
  • Spray the heated skillet with cooking grease. Add the quesadilla. Cook for about 2-3 minutes on both sides, or until cheese is melted & tortillas are crispy.
  • When it's finished cooking, remove from heat. Use a pizza cutter, scissors, or knife to cut into 4 pieces.
  • Serve with cilantro, sliced avocado, and salsa.
  • Repeat the process for as many quesadillas as you'd like!
  • Enjoy!
