Preheat oven to 350 degrees.
Spray muffin tin really well and set aside.
Dice the spinach into small pieces and set aside.
Dice the red pepper into very small pieces.
Heat a small skillet over medium heat. Spray well with cooking grease (or use a little olive oil) to coat the pan. Once heated, add the red pepper pieces. Cook until tender and charred, about 5 minutes. Take the peppers off the heat and set aside.
In a blender, add the egg whites and cottage cheese. Blend well.
Pour the egg white & cottage cheese mixture evenly into the muffin tin.
Sprinkle the red pepper pieces and spinach evenly over each bite.
Sprinkle the shredded cheese evenly over the bites.
Sprinkle salt and pepper over each bite.
Fill a baking dish with water and place in the oven.
Add the muffin tin to the oven.
Bake at 350 for about 25-30 minutes.
