Cheese & Veggie Egg White Bites

Inspired by Starbucks' popular egg white bites, here's my high-protein take on some veggie egg white bites with spinach and roasted red bell peppers (sans the sous vide).

Ingredients

  • 1.5 cups egg whites
  • 1 cup nonfat cottage cheese
  • ¼ cup cheddar cheese shredded
  • cup spinach diced
  • ½ cup red bell pepper diced
  • salt & pepper sprinkled

Instructions

  • Preheat oven to 350 degrees.
  • Spray muffin tin really well and set aside.
  • Dice the spinach into small pieces and set aside.
  • Dice the red pepper into very small pieces.
  • Heat a small skillet over medium heat. Spray well with cooking grease (or use a little olive oil) to coat the pan. Once heated, add the red pepper pieces. Cook until tender and charred, about 5 minutes. Take the peppers off the heat and set aside.
  • In a blender, add the egg whites and cottage cheese. Blend well.
  • Pour the egg white & cottage cheese mixture evenly into the muffin tin.
  • Sprinkle the red pepper pieces and spinach evenly over each bite.
  • Sprinkle the shredded cheese evenly over the bites.
  • Sprinkle salt and pepper over each bite.
  • Fill a baking dish with water and place in the oven.
  • Add the muffin tin to the oven.
  • Bake at 350 for about 25-30 minutes.
  • Let cool and enjoy!
