Chocolate Peanut Butter Rice Cake Bars

My sweet take on the viral chocolate peanut butter rice cake! Rice cake bars created with one of life's most perfect duos - chocolate and peanut butter.

Ingredients

  • 6 rice cakes
  • ½ cup peanut butter
  • ½ cup dark chocolate
  • 1 teaspoon coconut oil
  • flaky sea salt

Instructions

  • Crumble the rice cakes into small pieces and put into a large bowl.
  • Place the peanut butter into a microwave-safe bowl. Heat in the microwave for 30 seconds, until slightly melted. Stir.
  • Pour the melted peanut butter over the rice cake pieces and stir, until mostly coated (it will not be completely coated).
  • Spread the rice cake pieces evenly into a 9 x 9 pan.
  • Place the chocolate chips and coconut oil in a microwave-safe bowl. Heat in the microwave for 2 minutes, stirring every 30 seconds, until chocolate is melted.
  • Pour the chocolate over the rice cake pieces, drizzling everywhere.
  • Sprinkle with flaky sea salt.
  • Place in the freezer for at least 30 minutes - 1 hour. Break into pieces and enjoy!
