Chocolate Peanut Butter Rice Cake Bars
My sweet take on the viral chocolate peanut butter rice cake! Rice cake bars created with one of life's most perfect duos - chocolate and peanut butter.

- 6 rice cakes
- ½ cup peanut butter
- ½ cup dark chocolate
- 1 teaspoon coconut oil
- flaky sea salt
Crumble the rice cakes into small pieces and put into a large bowl.
Place the peanut butter into a microwave-safe bowl. Heat in the microwave for 30 seconds, until slightly melted. Stir.
Pour the melted peanut butter over the rice cake pieces and stir, until mostly coated (it will not be completely coated).
Spread the rice cake pieces evenly into a 9 x 9 pan.
Place the chocolate chips and coconut oil in a microwave-safe bowl. Heat in the microwave for 2 minutes, stirring every 30 seconds, until chocolate is melted.
Pour the chocolate over the rice cake pieces, drizzling everywhere.
Sprinkle with flaky sea salt.
Place in the freezer for at least 30 minutes - 1 hour. Break into pieces and enjoy!
