Coconut Chocolate Chip Bars Bliss Bars

These coconut chocolate chip bliss bars are sweet, chewy, and taste incredible! This coconut and chocolate chip dessert is easy, no-bake, and nutritious.

Equipment

Ingredients

For the Bar:

  • 1 cup pitted dates
  • 2 cups shredded coconut
  • 1 cup walnuts
  • ¼ cup dark chocolate chips
  • ¼ cup honey
  • ¼ cup nut butter

For Bottom of Bar:

  • 1 cup dark chocolate chips (melted)

For Topping:

  • 2 tablespoon shredded coconut
  • ¼ cup mini dark chocolate chips

Instructions

  • For the Bottom of the Bar:
  • Place a piece of parchment paper on a baking sheet.
  • Melt 1 cup of chocolate chips. (To melt, place the chocolate chips in a microwave-safe bowl and heat on high in the microwave for 1 minute or until the chocolate is melted. Stir until the chocolate has reached a melted consistency. Add 30 seconds of cooking time if needed.)
  • Spread the melted chocolate onto the parchment paper. Use a spoon to cover the entire baking sheet.
  • Place the baking sheet in the freezer for 20 minutes.
  • For the Bar:
  • Place the dates and nuts in the food processor. Pulse until it is blended into small pieces.
  • Add coconut, honey, nut butter, and chocolate chips to the food processor. Pulse until it is all combined and forms a dough.
  • The Remaining Steps
  • After the chocolate is frozen, take the baking sheet out of the freezer and use your hands or a spoon to spread the dough across the melted chocolate.
  • Sprinkle the top with remaining mini chocolate chips and coconut.
  • Freeze for at least an additional 20 minutes.
  • Take out of freezer, cut into pieces, and enjoy!
  • To store, place pieces of bar in a storage container and keep in the freezer.

Notes

This bar tastes the best when it is stored in the freezer!
