Crockpot Chicken Spaghetti

This cheesy, creamy crockpot chicken spaghetti is going to be a family favorite! This elevated spaghetti is made right in a crockpot and the final result is absolutely delicious.

Ingredients

  • 1.75 lbs boneless skinless chicken breasts
  • 2 10.5 oz cans of non fat cream of chicken soup
  • 10 oz can of diced tomatoes (not drained)
  • 8 oz neufchatel cheese (or cream cheese)
  • 1 cups mozzarella cheese shredded
  • 1 tablespoon 5-6 garlic cloves minced
  • 1 tablespoon italian seasoning
  • salt and pepper
  • 1 lb spaghetti

Instructions

  • Place the chicken breast in slow cooker.
  • Pour the cream of chicken soup and diced tomatoes over the chicken. Add the garlic and Italian seasoning.
  • Cover and cook on high for 3-4 hours or low 5-6 hours.
  • Take the chicken out of the crock pot and shred.
  • Add the chicken back to the crockpot.
  • Stir in the neufchatel cheese and mozzarella cheese. Cover and cook on low for 20-30 minutes, until the cheese is melted.
  • While the cheese is melting, cook the spaghetti noodles. Cook according to the package instructions.
  • Stir spaghetti noodles into the crock pot mixture.
  • Top with red pepper flakes & parmesan.
  • Enjoy!
