Ingredients

For the Salad:

  • 20 oz shredded chicken
  • ½ cup celery (chopped) or apple
  • ¼ cup red onion (diced)
  • ¼ cup raisins
  • 2 tablespoon cashews (chopped)

For the Dressing:

  • cup plain greek yogurt
  • 1 tbsp honey
  • 1 tablespoon lemon juice
  • 2 teaspoon curry powder
  • dash cayenne pepper
  • dash sea salt

Instructions

  • Add the chicken, celery, red onion, raisins, and almonds to a bowl. Mix well.
  • In a separate bowl, add the greek yogurt, honey, lemon juice, curry powder, cayenne, and salt. Mix well. Taste test & adjust seasonings if desired.
  • Pour the dressing over the salad into the large mixing bowl.
  • Stir until the dressing has coated all the ingredients.
  • Enjoy!
