Patriotic Pancake Skewers

These patriotic pancake skewers are cute stacks of mini pancakes topped with fresh berries. This recipe is the perfect fun and festive red, white, and blue breakfast or summer potluck snack!

Equipment

  • skillet
  • spatula
  • small scoop or spoon
  • toothpicks or small skewers

Ingredients

  • 1 cup Kodiak Cakes Buttermilk Power Cakes Mix
  • 1 cup water
  • ½ cup blueberries
  • ½ cup raspberries
  • 2 tbsp confectioners sugar

Instructions

  • Heat up a large skillet on a stovetop.
  • Mix 1 cup of Kodiak Cakes mix with 1 cup of water.
  • When the skillet is warmed up, add cooking spray or butter.
  • Use a small scoop or spoon to scoop the pancake mix into mini pancakes onto the skillet.
  • Let the pancakes cook until you see bubbles form on the face-up side. Then flip and cook until brown, about 1 minute.
  • Continue making mini pancakes until all of the batter is used.
  • Once cooled, make stacks of 4-5 mini pancakes.
  • Place a toothpick or small skewer into each stack of pancakes to hold the stacks in place.
  • Add a blueberry and raspberry to the top of each stack.
  • Repeat until all stacks are made.
  • Sprinkle all of the stacks with confectioners sugar.
  • Enjoy!
