Equipment

  • 32 oz mason jar
  • Measuring Cups

Ingredients

  • 1 cup bell peppers orange & yellow, diced
  • cup cup green onion chopped
  • cup cilantro chopped
  • ½ cup edamame
  • 2 oz brown rice pad thai noodles cooked
  • 2-3 cups spinach chopped
  • ½-1 cup red cabbage chopped
  • ½ cup carrots shredded
  • 3-4 tablespoon peanut dressing full recipe listed in post

Instructions

  • Gather all ingredients.
  • Start by cooking the noodles.
  • Wash and chop all vegetables.
  • Add the dressing to the bottom of the jar. Make layers with all of the ingredients. Top with spinach and seal with the lid.
  • Keep in the fridge until you consume.
  • Enjoy!

Notes
