- 1 lb turkey sausage or ground chicken
- 8 oz bowtie pasta
- ½ butternut squash about 2 cups, diced into small pieces
- 4 oz spinach
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon garlic
- 1 cup cream
- Toppings: parmesan red pepper flakes
Preheat oven to 400 degrees.
Peel the butternut squash, scoop out the seeds, and cut in half. Chop half of the butternut squash (about 2 cups) into small cubes. Toss in a bowl with olive oil, salt, and pepper.
Roast the butternut squash in the oven for 30 degrees.
Heat a large pot of water. Add pasta and cook according to package instructions. Drain and set aside.
Heat a large skillet over medium-high heat. Add sausage. Cook about 8 minutes, until browned. Add garlic and spices to the meat. Stir.
Add spinach to the skillet and let cook for 2 minutes, until spinach is wilted.
Add the cooked butternut squash and pasta to the skillet so everything is combined.
Pour in the cream, mix well, and heat on low for 2 minutes.
Top with red pepper flakes and parmesan. Enjoy!
