Roasted Butternut Squash Pasta with Sausage

Ingredients

  • 1 lb turkey sausage or ground chicken
  • 8 oz bowtie pasta
  • ½ butternut squash about 2 cups, diced into small pieces
  • 4 oz spinach
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic
  • 1 cup cream
  • Toppings: parmesan red pepper flakes

Instructions

  • Preheat oven to 400 degrees.
  • Peel the butternut squash, scoop out the seeds, and cut in half. Chop half of the butternut squash (about 2 cups) into small cubes. Toss in a bowl with olive oil, salt, and pepper.
  • Roast the butternut squash in the oven for 30 degrees.
  • Heat a large pot of water. Add pasta and cook according to package instructions. Drain and set aside.
  • Heat a large skillet over medium-high heat. Add sausage. Cook about 8 minutes, until browned. Add garlic and spices to the meat. Stir.
  • Add spinach to the skillet and let cook for 2 minutes, until spinach is wilted.
  • Add the cooked butternut squash and pasta to the skillet so everything is combined.
  • Pour in the cream, mix well, and heat on low for 2 minutes.
  • Top with red pepper flakes and parmesan. Enjoy!
