Equipment

  • aluminum foil

Ingredients

  • 8 whole wheat tortillas (360 grams)
  • 1 lb ground turkey sausage, raw (16 oz)
  • 6 eggs (300 grams)
  • 1.5 cups egg whites (368 grams)
  • ½ cup cheddar cheese, shredded (56 grams)
  • 1 bell pepper, diced (200 grams)
  • ½ onion, diced (100 grams)
  • 1 cup spinach (28 grams)
  • 1 can black beans, low sodium (15 oz)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon garlic powder
  • optional: avocado, hot sauce

Instructions

  • Heat a large skillet over medium heat.
  • Spray with cooking spray.
  • Add diced onion and bell pepper. Cook for about 3 minutes, until onion is translucent.
  • Add turkey sausage. Cook until meat is brown and cooked through. Drain excess grease.
  • In a separate bowl whisk together eggs, egg whites, and seasonings.
  • Pour the egg mixture into the skillet with the meat. Stir frequently and cook until eggs are cooked through scrambled.
  • Cut heat to low. Stir in spinach and beans.
  • Sprinkle the scramble mixture with cheese and let sit for about a minute, until cheese is melted.
  • Lay out 8 tortillas.
  • Separate the scramble evenly into the tortillas.Roll into burritos.
  • Wrap in foil and store in a sealed bag in the fridge.
