Summer Veggie Chicken Pita

High-protein. Loads of flavor. All in about 5 minutes. With this summer veggie chicken pita, you get all of that and more!

Ingredients

  • 1 pita toasted
  • ½ cup zucchini sautéed (100 grams)
  • 1 oz goat cheese 28 grams
  • cup grape tomatoes sliced in half (50 grams)
  • grilled chicken tenderloin cooked and shredded (4 oz)
  • basil

Instructions

  • Toast pita. If not already done, lightly sauté chopped zucchini in a bit of olive oil.
  • While pita is warm, spread goat cheese evenly to cover the surface.
  • Layer sautéed zucchini evenly.
  • Top with chicken.
  • Add layer of tomatoes.
  • Sprinkle fresh basil on top.

Notes

I used one Joseph’s brand pita. You could also use naan or a flatbread.
Use flank steak instead of chicken.
Use roasted red pepper hummus instead of goat cheese. OR add it with goat cheese (so good).
To make GF: Use gluten-free pita, naan, or flatbread.
To make DF: Use hummus instead of goat cheese.
To meal prep: Prepare all of the cooked ingredients (zucchini & chicken) so that all ingredients are ready to quickly assemble in less than 5 minutes, when needed.
