Ingredients

  • 4 small sweet potatoes diced (600 g)
  • 2 large bell peppers diced (250 g)
  • 1 medium onion diced (200 g)
  • ½ bag spinach 110 g
  • 1 lb turkey sausage
  • 6 eggs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon cayenne

Instructions

  • Heat a large skillet over medium heat.
  • Add turkey sausage to skillet. Use a spatula to break up meat as it cooks. Cook until browned.
  • Use a slotted spoon to scoop the meat out of the skillet. Place in a bowl and set aside; do not drain the skillet.
  • Add peppers and onions to skillet. Cook for about 3-4 minutes, stirring frequently.
  • Add sweet potatoes and spices. Cook for about 7-10 minutes, until potatoes begin to soften, stirring frequently.
  • Add the cooked turkey sausage, along with spinach, back into the mixture.
  • Cover the lid and cook for 10 minutes.
  • Use a spoon to create pockets in the mixture. Crack eggs into pockets.
  • Cover with lid and let the eggs cook 3-4 minutes or until eggs reach desired doneness.
  • Top with extras like avocado, cheese, hot sauce, & whatever else sounds good to you!

Notes
