Banana Chocolate Chip Bars

- 3 bananas
- 2 eggs room temp
- ½ cup honey
- 2 teaspoon vanilla
- ½ cup coconut oil melted
- 1.5 teaspoon baking soda
- 1.5 cups whole wheat flour
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 1 cup chocolate chips
Get eggs out of the fridge before starting this recipe so they can get to room temperature.
Preheat the oven to 350 degrees.
Peel and place the bananas in a large bowl.
Use a fork to mash the bananas well.
Add the wet ingredients (honey, vanilla, and melted coconut oil) to the large bowl with the mashed bananas.
Use a hand mixer or standing mixer and mix for 2-3 minutes.
Add the dry ingredients to the bowl. Mix only until everything is combined (don’t overmix!)
Fold in the chocolate chips.
Spray a 9x9 baking dish really well with cooking spray.
Pour the batter into the baking dish.
Bake for 25-30 mins (until middle is cooked through).
Best served right after baking! Enjoy.
