Cheesy Chicken Crescent Roll Casserole

Equipment

  • 9x13 casserole dish (or similar)

Ingredients

  • 8 oz can crescent rolls
  • 1 lb chicken breast cooked and shredded
  • ½ cup cheddar cheese shredded
  • ½ cup mozzarella cheese shredded
  • 8 oz neufchatel cheese
  • 1 cup nonfat greek yogurt
  • ½ teaspoon salt
  • ½ tsp pepper

Instructions

  • Preheat the oven to 365 degrees.
  • Grease an 11 x 13 casserole dish with cooking spray.
  • Open the can of crescent rolls, unroll, and lay evenly on bottom of baking dish, covering completely.
  • Put the block of neufchatel cheese in a microwave-safe bowl & microwave for 45 seconds to soften. Add the greek yogurt and seasonings to the bowl and mix well.
  • Add the cooked, shredded chicken to the bowl of cream cheese mixture. Stir until well mixed and evenly coated.
  • Spread the chicken mixture evenly on top of the crescent rolls. Use a spoon to evenly disperse.
  • Sprinkle both shredded cheeses evenly on top of the chicken layer.
  • Bake for 35-40 mins.
  • Let cool and enjoy!
