Chicken Ramen Stir Fry

Sauce
- ½ cup soy sauce 4 oz
- ¼ rice vinegar 2 oz
- 1 tablespoon honey 21 grams
- 1.5 teaspoon sesame oil
Stir Fry
- 1.5 lbs ground chicken lean (24 oz)
- 2 packets ramen noodles dry, seasoning discarded (6 oz)
- 8 oz bag snap peas 226 grams
- 1 bell pepper diced (150 grams)
- ⅓ cup green onions chopped (23 grams)
- 3 cloves garlic minced (15 grams)
- 1.5 teaspoon canola oil
- Salt & pepper
Make sauce. Set aside.
Boil water, add ramen. Cook for 3 mins. Drain and rinse with cold water.
Add 1 tablespoon canola oil to a large skillet over high heat.
Add garlic and cook for 2 mins. Add chicken to skillet and cook for 5 minutes, draining excess liquid. Sprinkle with salt & pepper.
Add bell peppers and snap peas, cooking for 3 mins.
Add in noodles and sauce mixture. Cut heat to low and let thicken for 5 minutes, stirring occasionally.
Top with green onion and sesame seeds.
- To meal prep: Make according to instructions. Store in an airtight container in the fridge for up to 5 days. Split into 6 containers (one serving each) or store in a big container and serve as needed.
