Heat a large skillet over medium-high heat.
Add chorizo and cook until brown, about 8-10 minutes.
Drain meat and scoop chorizo onto a plate with a paper towel to soak up excess fat while finishing next steps.
In a blender, add egg whites, eggs, cottage cheese, salsa, and seasonings. Blend until smooth consistency.
Spray a large casserole dish with cooking grease.
Spread hashbrowns evenly on the bottom of casserole dish.
Pour egg mixture evenly over the hashbrowns.
Scoop meat on top of the eggs.
Evenly sprinkle the top with cheese.
Bake at 375 for 45 mins or until eggs are fully cooked through.
Take out of oven & let cool.
