Chorizo breakfast casserole

This chorizo breakfast casserole is a super easy and delicious dish. It serves six, so it is perfect for your next brunch or breakfast get-together. It is high-protein, full of flavor and uses chorizo - the classic Spanish and Mexican version of ground pork.

Once again inspired by our time in the hill country of Texas, these flavors are undeniably tasty and timeless.

What is chorizo?

If you've never had chorizo before... get excited! It is an extremely flavorful version of ground pork originating in Spain. There are both Spanish and Mexican versions. The Mexican version is typically flavored with vinegar and chili peppers and is a bit spicier than it's Spanish counterpart.

It's a versatile feature in many different dishes - with eggs, crispy and sprinkled over a salad, in a pasta, you name it. No matter how you end up deciding to use chorizo, it is guaranteed to be a blast of flavor. Get ready to have your taste buds' minds blown!

Here is everything you'll get together before making your chorizo breakfast casserole:

  • chorizo or pork sausage
  • egg whites
  • eggs
  • cottage cheese
  • salsa
  • frozen hashbrowns
  • cheddar cheese shredded
  • salt
  • pepper
  • onion powder
  • optional: hot sauce

Casserole substitution ideas

Make any substitution you deem necessary, but remember that changing any of the primary ingredients will result in a different result!

  • Sausage: If chorizo isn't really your thing, you could always use a ground turkey or a different sort of sausage.
  • Cottage Cheese: You can try substituting sour cream for the cottage cheese in this recipe. Cottage cheese does add extra protein while keeping the fat content lower.
  • Salsa: Choose any salsa you'd like based on how hot you're hoping this casserole will be.
  • Shredded Cheese: This recipe calls for shredded cheddar cheese, but you could substitute any of your favorite shredded cheese here.

How to make chorizo breakfast casserole

Follow these steps to have this yummy casserole ready to go:

  • Heat a large skillet over medium-high heat.
  • Add chorizo and cook until brown, about 8-10 minutes.
  • Drain meat and scoop chorizo onto a plate with a paper towel to soak up excess fat while finishing next steps.
  • In a blender, add egg whites, eggs, cottage cheese, salsa, and seasonings. Blend until smooth consistency.
  • Spray a large casserole dish with cooking grease.
  • Spread hashbrowns evenly on the bottom of casserole dish.
  • Pour egg mixture evenly over the hashbrowns.
  • Scoop meat on top of the eggs.
  • Evenly sprinkle the top with cheese.
  • Bake at 375 for 45 mins or until eggs are fully cooked through.
  • Take out of oven & let cool.
  • Enjoy!

Can I freeze a cooked casserole?

Yes, you can absolutely freeze this casserole after having cooked it. Make sure it's in a freezer safe dish before freezing, though.

If you're looking to treat a friend who just had a baby, is going through a rough time, or could simply use a home-cooked meal, this would be a fabulous choice for you to give to them frozen. Then, they're able to reheat whenever they're in need of a meal.

How to reheat breakfast casserole

If you're warming from frozen, you should cook it for twice as long as the recipe calls for, but at the same temperature. Do not thaw before baking. This could result in a soggy bottom!

If you're warming up straight from the microwave, just throw it in the microwave for a minute or two in a microwave-safe dish.

What do you serve with breakfast casserole?

There are many possibilities of what to serve alongside this Chorizo Breakfast Casserole. Fresh fruit would be absolutely amazing. Specifically some pineapple, mango, or raspberries would really suit the flavor of this casserole.

You could also serve some yogurt, toast and jam, or even some homemade salsa to top the breakfast casserole.

Do you have to brown meat before making a casserole?

Browning your meat before adding to the casserole really does make a difference. Browning it beforehand cuts down on the amount of grease in your final dish.

It will also add to the final flavor of the dish and reduces the possibility of all the meat clumping together.
