Coffee Cake Muffins

These coffee cake muffins are a mini version of classic coffee cake. They're crumbly, delicious, quick to make, and even quicker to eat—just add coffee!

Ingredients

For the Cake

  • ¼ cup butter melted
  • ½ cup greek yogurt
  • 2 eggs
  • ¼ cup milk
  • 1 teaspoon vanilla
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 1.5 cup Kodiak Cakes Power Cakes Mix

For the Crumb Topping

  • 2 tablespoons butter cold
  • ¼ cup Kodiak Cakes Buttermilk Power Cakes
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

For the Icing

  • ½ cup powdered sugar sifted
  • 2 tablespoons milk
  • ½ teaspoon vanilla

Instructions

  • Preheat oven to 350 degrees.
  • Gather all ingredients.
  • Add the dry cake ingredients to a bowl. Mix well.
  • Add the wet cake ingredients to a bowl. Stir well.
  • Add the wet ingredients to the bowl of dry ingredients and stir to combine (don’t over stir!)
  • Grease the muffin tin.
  • Pour the cake batter evenly among all spaces.
  • Make the crumb topping. Sprinkle over all the muffins.
  • Bake at 350 for 20 mins.
  • Making the icing while muffins are baking. Add the icing ingredients to a small bowl and stir well.
  • Take the muffins out of the oven and let them cool for about 10 minutes.
  • Drizzle with icing.
  • Enjoy!
