Coffee cake is any cake flavored with or intended to be eaten with a cup of coffee. It is typically a crumbly, cinnamon-y loaf, sometimes featuring nuts, spices, fruits, or icing. The texture depends on where the cake is made and can be spongy or cake-like. My favorite variety of coffee cake is a cake-like loaf topped with a brown sugar crumble and frosting.
Coffee cake muffins
I love coffee cake and have a really hard time only eating one slice! These coffee cake muffins are a travel-friendly, grab-and-go, portion-controlled version of the loaf. They have the same amazing taste but with a different presentation.
These coffee cake muffins are cinnamon cake-like muffins topped with a brown sugar crumble and homemade frosting. Coffee cake muffins are basically mini versions of the classic coffee cake. Each bite is packed with cinnamon goodness and is perfect with a cup of hot coffee or tea.
Healthy coffee cake muffins
Would you believe if I told you that these coffee cake muffins are actually healthy? Of course, everyone has their own definition of healthy, but these muffins are absolutely healthy to me! These muffins are lightened up with ingredients but packed with nutrition and flavor.
Each muffin is 168 calories and even has some protein! These healthy coffee cake muffins are perfect in the morning for breakfast, for an afternoon sweet treat, or after-dinner dessert.
What ingredients do I need?
To make these coffee cake muffins, you'll need ingredients for the cake muffins, the crumble topping, and the icing.
For the Cake
- Butter - You'll need a little bit of melted butter.
- Greek yogurt - This recipe uses greek yogurt as an ingredient, which provides nutrients and moisture to the muffins.
- Eggs - Two of any kind of eggs will work great.
- Milk - I use almond milk for this recipe, but you can use any kind of milk.
- Vanilla - Can you even make cake or muffins without vanilla?! (The answer is yet, but they're not as good!)
- Brown sugar - Brown sugar is a classic coffee cake ingredient.
- Cinnamon - This is another staple ingredient for coffee cake! Not only does it add incredible flavor, but it also is loaded with antioxidants.
- Kodiak Cakes Buttermilk Power Cakes Mix - I love to use Kodiak Cakes mix as a flour substitute while making muffins. Their website and mix boxes provide several muffin, bread, and other recipes as well.
For the Crumb Topping
- Butter - The crumb topping uses a little bit of cold butter.
- Kodiak Cakes Buttermilk Power Cakes - Instead of flour, this recipe uses a little bit of Kodiak Cakes Buttermilk Flapjack Mix.
- Brown sugar - Trust me when I list this as an ingredient for the crumb topping. It'll taste so delicious when it's mixed with the melted butter on top of the muffin!
- Cinnamon - Along with the brown sugar, this is essential for the crumb topping! There is no limit as to how much you add into the topping!
- Salt - Adding a little bit of salt will balance the sweetness of the crumb topping.
For the Icing
- Powdered sugar - It's so important to use SIFTED powder sugar when you make the icing! Sifting the powdered sugar will create the best consistency for the icing.
- Milk - I use almond milk to make the icing, but any kind of milk will work great!
- Vanilla - Adding a little bit of vanilla will create the perfect flavor for your homemade icing!
What substitutions can I make?
- Milk - Any kind of milk will work in this recipe.
- Kodiak Cakes Mix - If you make with other flours, you'll need to add some sort of leavening ingredient so the muffins will rise. The great thing about Kodiak Cakes or other pancake mixes is that they include the leavening ingredient!
- Icing - If you have an icing recipe you love, feel free to use yours instead!
- Other substitutions - I haven't experimented too much with other ingredients, but let me know if you try any substitutions that work well for you!
How long does it take to make this recipe?
This recipe has about 10 minutes of prep time and 20 minutes of cook time. It's safe to say you can make these muffins from start to finish in less than 30 minutes!
How do I make coffee cake muffins?
- Preheat oven to 350 degrees.
- Gather all ingredients.
- Add the dry cake ingredients to a bowl. Mix well.
- Add the wet cake ingredients to a bowl. Stir well.
- Add the wet ingredients to the bowl of dry ingredients and stir to combine (don’t over stir!)
- Grease the muffin tin.
- Pour the cake batter evenly among all spaces.
- Make the crumb topping. Sprinkle over all the muffins.
- Bake at 350 for 20 mins.
- Making the icing while muffins are baking. Add the icing ingredients to a small bowl and stir well.
- Take the muffins out of the oven and let them cool for about 10 minutes.
- Drizzle with icing.
- Enjoy!

I hate when people review a recipe and then say how they changed everything… I didn’t do that but I did use the cinnamon oat Kodiak mix instead of buttermilk, I still used cinnamon but didn’t measure. We didn’t do the icing, because we aren’t big icing fans, but these are so good!! Thank you for the recipe!
