These are easter pancake bites. There are small pancake bites topped with crushed cadbury mini eggs. They are pastel colors and look like easter!

Easter Pancakes

Easiest Easter egg hunt EVER. It's all in the pancakes!!! These Easter Pancakes are quick, easy, and perfect for brunch on Easter Sunday.

Equipment

  • muffin tin
  • oven

Ingredients

  • 2 cups pancake mix I use Kodiak Cakes Mix
  • 1.5 cups water
  • ½ cup cadbury mini eggs chopped

For Topping

  • syrup
  • whipped cream

Instructions

  • Preheat oven to 350 degrees.
  • Spray muffin tin with cooking spray and set aside.
  • Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
  • Chop the Cadbury mini eggs into small pieces.
  • Mix ½ of the chopped eggs into the batter and stir.
  • Pour batter evenly across the 12 spaces of the muffin tin.
  • Sprinkle the remaining Cadbury egg pieces on top of the muffins.
  • Bake at 350 for about 20 minutes, or until middle is cooked through.
  • Enjoy with a side of syrup or topped with whipped cream!
