Easter pancakes

These Easter pancakes are the easiest way to hunt for Easter eggs! Grab mini chocolate eggs, pancake mix, and water to make this 3-ingredient pancake recipe. These fluffy, bite-sized pancakes are quick, delicious, and perfect for brunch!

What are cadbury eggs?

Cadbury Mini Eggs are rich and creamy chocolate coated in a crispy and colorful shell. These mini eggs are usually only seen as Easter approaches.

Cadbury egg pancakes

This recipe uses Cadbury Mini Eggs as one of the main ingredients. This recipe uses only 3 ingredients total making it quick and easy! These pancake bites are delicious and packed with protein too. Even if you don’t consider yourself a Cadbury fan, these pancakes just might make you a believer.

What ingredients do I need?

The recipe only requires 3 ingredients! I love recipes that are EASY and use what I already have in the pantry and this recipe definitely meets those requirements.

  • Kodiak Cakes Power Cakes Mix – Kodiak Cakes is the only pancake mix I ever use. I love the flavor, the nutritional components, and how easy it is to make. I use the classic Buttermilk flavor for this recipe, but you could use whatever mix you like the best!
  • Cadbury Mini Eggs – Chopped Cadbury mini eggs are what make these Easter pancakes special!
  • Water – You’ll need water to mix with the pancake mix. For the ratio, you will use a little less than the amount of mix.
  • Syrup or Whipped Cream – Using syrup for dipping or whipped cream for topping is totally optional!
These are the ingredients for the easter pancakes. There's a muffin tin with the pancake bites, a box of Kodiak Cakes pancake mix, and a bag of Cadbury mini eggs.

What substitutions can i make?

This recipe is absolutely one where you can make substitutions. Here are a few options:

  • Pancake Mix – I like to use Kodiak Cakes, but you can use whatever kind of pancake mix you already have!
  • Cadbury Mini Eggs – This is the most important ingredient so I would recommend keeping them in the recipe. However, you could totally swap for your favorite chopped up chocolate Easter candy.
  • Syrup – I like to use some syrup for dipping, but you can totally add some syrup or vanilla to the batter before you bake the bites!
  • Whipped Cream – I think the whipped cream tastes so good with the tartness of the raspberries!

What equipment do I need?

The main piece of equipment you need for this recipe is a muffin tin. If you have a mini muffin tin, that would work as well.

What is the trick to fluffy pancakes?

If you’re just using a simple mix, the trick is to not over stir! I mix to barely combine the ingredients. This will make the bites extra fluffy!

Can you save pancakes?

I will store these in an airtight container in the fridge for up to 5 days. Just heat them up in the microwave the morning you want them!

Is it eaten hot or cold?

You can eat these pancake bites hot or cold! They taste great both ways. If you want to heat them up, just heat in the microwave. I eat with toppings both ways.

How do I make easter pancakes?

This recipe is SO easy. Here’s what you’ll do:

  • Preheat oven to 350 degrees.
  • Spray muffin tin with cooking spray and set aside.
  • Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
  • Chop the Cadbury Mini Eggs into small pieces.
  • Mix ½ of the Cadbury Mini Eggs into the batter and stir.
  • Pour batter evenly across the 12 spaces of the muffin tin.
  • Sprinkle the remaining Cadbury Egg pieces on top of the muffins.
  • Bake at 350 for about 20 minutes, or until middle is cooked through.
  • Enjoy with a side of syrup or topped with whipped cream!

What do you eat on easter sunday?

Easter Sunday is perfect for brunch, and brunch is the perfect time for some fluffy pancakes! Instead of spending all morning making individual pancakes for your family or friends, spend 5 minutes preparing this recipe to feed everyone.

Easter pancakes, protein waffles, monkey bread, savory breakfast muffins, or pancake sausage bites are all in the running for easy recipes to enjoy on Easter Sunday.

Such a good recipe for breakfast, but I’ve also used it as a sweet afternoon snack! It’s so nice that it has a little kick of protein and you can’t even tell!
