- 4 eggs
- ½ cup egg whites (133 grams)
- ½ cup nonfat cottage cheese (114 grams)
- 1 tablespoon olive oil (13 grams)
- 1 small onion diced (100 grams)
- 6 slices bacon cooked and chopped (45 grams)
- ½ cup sharp cheddar cheese shredded (56 grams)
- 2 cups spinach (50 grams)
- ½ teaspoon each salt & pepper
- Optional: avocado, hot sauce
Preheat oven to 350 degrees.
In a large bowl, whisk together eggs, egg whites, and cottage cheese until well combined. Sprinkle in salt and pepper. Set aside.
Heat olive oil in a large oven-safe skillet over medium heat.
Add onion. Cook until translucent, about 3 minutes.
Add spinach and cook until it wilts, about 2 minutes. Add bacon and stir.
Pour the egg mixture into the skillet. Top with cheese.
Bake at 350 for 25 mins.
Remove from heat and let cool before serving.
Optional: Serve with avocado and hot sauce.
