Ingredients

  • 4 eggs
  • ½ cup egg whites (133 grams)
  • ½ cup nonfat cottage cheese (114 grams)
  • 1 tablespoon olive oil (13 grams)
  • 1 small onion diced (100 grams)
  • 6 slices bacon cooked and chopped (45 grams)
  • ½ cup sharp cheddar cheese shredded (56 grams)
  • 2 cups spinach (50 grams)
  • ½ teaspoon each salt & pepper
  • Optional: avocado, hot sauce

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together eggs, egg whites, and cottage cheese until well combined. Sprinkle in salt and pepper. Set aside.
  • Heat olive oil in a large oven-safe skillet over medium heat.
  • Add onion. Cook until translucent, about 3 minutes.
  • Add spinach and cook until it wilts, about 2 minutes. Add bacon and stir.
  • Pour the egg mixture into the skillet. Top with cheese.
  • Bake at 350 for 25 mins.
  • Remove from heat and let cool before serving.
  • Optional: Serve with avocado and hot sauce.

  • 1 serving size is ¼ skillet (160 grams)
