Easy Pancake Bites

These easy, healthy pancake bites are in constant rotation at my house—I bet they'll be a hit for you, too! Just two simple ingredients form the foundation for so many delicious flavor combinations.

Equipment

Ingredients

Pancake Bite Base

  • 2 cups pancake mix I use a protein-packed pancake mix
  • 1.5 cups water

Fruit-filled Pancake Bites

  • 1 cup fruit Fresh/frozen raspberries, blueberries, banana, etc.
  • ½ cup nuts chopped; if desired
  • 1.5 cups water

Chocolate Chip Pancake Bites

  • 2 cups pancake bites
  • ½ cup mini chocolate chips
  • 1.5 cups water

Chocolate Pancake Bites

  • 2 cups chocolate pancake mix
  • ½ cup mini chocolate chips
  • 1.5 cups water

Pumpkin Pancake Bites

  • 2 cups pumpkin pancake mix mix with batter; adjust to taste
  • 1.5 cups water

For Topping

  • whipped cream
  • syrup

Instructions

  • Preheat oven to 350 degrees.
  • Spray muffin tin with cooking spray and set aside.
  • Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
  • Chop any filling ingredients.
  • Mix ¾ of the filling ingredients nto the batter and stir.
  • Pour batter evenly across the 12 spaces of the muffin tin.
  • Sprinkle the remaining ¼ of the filling ingredients on top of the muffins.
  • Bake at 350 for about 20 minutes, or until middle is cooked through.
  • Enjoy with a side of syrup or topped with whipped cream!
