Easy Pancake Bites
These easy, healthy pancake bites are in constant rotation at my house—I bet they'll be a hit for you, too! Just two simple ingredients form the foundation for so many delicious flavor combinations.

Pancake Bite Base

pancake mix
I use a protein-packed pancake mix

water
Fruit-filled Pancake Bites

fruit
Fresh/frozen raspberries, blueberries, banana, etc.

nuts
chopped; if desired

Chocolate Chip Pancake Bites

pancake bites

mini chocolate chips

Chocolate Pancake Bites

chocolate pancake mix

mini chocolate chips

Pumpkin Pancake Bites

pumpkin pancake mix
mix with batter; adjust to taste

For Topping
whipped cream

Instructions
Preheat oven to 350 degrees.
Spray muffin tin with cooking spray and set aside.
Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
Chop any filling ingredients.
Mix ¾ of the filling ingredients nto the batter and stir.
Pour batter evenly across the 12 spaces of the muffin tin.
Sprinkle the remaining ¼ of the filling ingredients on top of the muffins.
Bake at 350 for about 20 minutes, or until middle is cooked through.
Enjoy with a side of syrup or topped with whipped cream!
