I'm a firm believer that bite-sized foods are better than regular-sized foods. Then if the bite-sized foods are quick and easy to make, they somehow get a little better! My pancake sausage bites have been one of the most popular recipes on my website since they were posted so I felt inspired to make another version of them... then another... until I realized the possibilities were pretty much endless.
You can basically turn the simple pancake bite into the vehicle for ingredient combinations of your dreams. You like fresh fruit? Throw it in there! Nuts? Those too.
Chocolate? Sure! I know I have.
This post is here to give you a few ideas that have been my favorites (but I want to hear about yours in the comments). I have the rundown on how to get a fluffy pancake bite in no time so you can focus on the flavor combos of your dreams.

This pancake bite recipe only requires 3 ingredients so it’s quick, easy, and perfect for meal prep. I like to make a batch of these on the weekend and heat them up during the week so they are ready for busy mornings. Dip them in syrup, top with whipped cream or take them to-go!
What ingredients do I need?
The recipe only requires 2 ingredients! I love recipes that are EASY and use what I already have in the pantry and this recipe definitely meets those requirements.
- Pancake Mix – Nowadays there are so many delicious options here. Pick one that you'd want to eat as a pancake on its own—you can even find some with high protein content, which I like to do.
- Water – You’ll need water to mix with the pancake mix. For the ratio, you will use a little less than the amount of mix.
What can I put in pancake bites?
Here's where you can start to get creative. I'm sharing just a few of my favorite options here, but you can probably already tell that the amount of possible combinations is pretty big.
- Fruit-Filled Pancake Bites: Here's where I got started (because it's so easy). Here's a few ideas for using fruit in these:
- Raspberries & Cream: Use fresh or frozen raspberries and top with whipped cream
- Blueberries & Cinnamon: Some blueberries with a hint of cinnamon spice? Sign me up.
- Banana & Walnut: Top them and fill them with this classic muffin combo.
- Chocolate Chip Bites: The original pancake mix with mini chocolate chips combination is one everyone will love!
- Double Chocolate Bites: If you've ever eaten pancakes before, you've probably already thought about putting chocolate chips in these. But what if I told you that you can use chocolate pancake mix as well for a double-chocolate dream? You're welcome.
- Pumpkin Pancake Bites: If you're all about pumpkin in the fall (or any other time, for that matter), use a pumpkin pancake mix along with the batter can really change the game.

What equipment do I need?
The main piece of equipment you need for this recipe is a muffin tin. If you have a mini muffin tin, that would work as well.

What is the trick to fluffy pancakes?
If you're just using a simple mix, the trick is to not over stir! I mix to barely combine the ingredients. This will make the bites extra fluffy!

Can you save pancakes?
I will store these in an airtight container in the fridge for up to 5 days. Just heat them up in the microwave the morning you want them!

Is it eaten hot or cold?
You can eat these pancake bites hot or cold! They taste great both ways. If you want to heat them up, just heat in the microwave. I eat with toppings both ways.
How do I make this recipe?
This recipe is SO easy. Here’s what you’ll do:
- Preheat oven to 350 degrees.
- Spray muffin tin with cooking spray and set aside.
- Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
- Chop any filling ingredient into small pieces.
- Mix ¾ of your filling ingredient into the batter.
- Pour batter evenly across the 12 spaces of the muffin tin.
- Sprinkle the remaining ¼ of your filling on top of the muffins.
- Bake at 350 for about 20 minutes, or until middle is cooked through.
- Enjoy with a side of syrup or topped with whipped cream!

What can I add to plain pancake mix?
You can add anything that sounds good to you! Some mix-in's that come to mind first are cinnamon, chocolate chips, fruit, or nuts. You'll bake all of these the same way.
What can be made from pancake mix?
Pancake bites are the perfect solution for using pancake mix! All you need is pancake mix and water for the base, and then whatever mix-ins.

What can you do with leftover pancake batter?
Pour leftover pancake batter into a greased muffin tin and make pancake bites! Bake in the oven at 350 for a stress-free recipe.

Instructions

Absolutely great! Meal prepped these on Sunday night in about 10 minutes for the busy weekday morning rush. Bonus - my 4 year old liked them. I used blueberries because that’s what I had on hand. Taste great, easy and fit my macros! All the wins!
