- 1 English Muffin I use Thomas’ Light Multi-Grain 100 calorie English Muffins
- ¼ cup pizza sauce
- 2 tablespoon reduced fat mozzarella cheese shredded
- 2 tablespoon mini pepperonis
- Italian seasoning sprinkle
- red pepper flakes
Preheat oven to 400 degrees.
Cut English muffin in half and set on cooking tray.
Spritz each side of the English muffin with cooking spray.
Bake muffins for 3-4 minutes. Take out of the oven.
Spread the sauce evenly on each side. (About ⅛ cup on each side).
Split the cheese in half and sprinkle evenly on each side. (About 1 tablespoon on each side).
Split the pepperonis in half and sprinkle evenly on each side. (About 1 tablespoon on each side).
Sprinkle the muffins with Italian seasoning and red pepper flakes.
Bake for 10 minutes.
