Part of what makes pizza so good is simplicity: there's sauce, cheese, dough, toppings—and not much else. Easy, right?

Yet there's a reason why the pizza delivery industry is so massive. As straightforward as it should be to make, it takes a big effort to actually make a handmade pizza come together.

What about a middle ground? What if you want to put some pizzas together yourself, but don't have a massive coal-fired oven or time to knead your own scratch-made dough?

This English Muffin Pizza Recipe might be your ticket. These mini pies give you all the joy of constructing your pie (truly lunchables vibes) and in a time that'll outdo any delivery joint around.

So, why use an english muffin as the base for this recipe? Why not use a pre-made pizza crust, for example, or something else?

I find that english muffins hit that sweet spot for mini pizzas like this. They have a nice chew, but can still get crispy on top and balance well against the toppings.

Chances are high that you've made something similar to this. You won't find any surprises here, but sometimes it's nice to have someone type it out for you, right?

  • English Muffin
  • pizza sauce
  • reduced fat mozzarella cheese (shredded)
  • mini pepperonis
  • Italian seasoning sprinkle
  • red pepper flakes

How to make English muffin pizzas

Of course, these come together in a snap:

  • Preheat oven to 400 degrees.
  • Cut English muffin in half and set on cooking tray.
  • Spritz each side of the English muffin with cooking spray.
  • Bake muffins for 3-4 minutes. Take out of the oven.
  • Spread the sauce evenly on each side. (About ⅛ cup on each side).
  • Split the cheese in half and sprinkle evenly on each side. (About 1 tablespoon on each side).
  • Split the pepperonis in half and sprinkle evenly on each side. (About 1 tablespoon on each side).
  • Sprinkle the muffins with Italian seasoning and red pepper flakes.
  • Bake for 10 minutes.
  • Let cool and enjoy!

How to reheat English muffin pizzas in oven

If you end up baking these but not eating them—say, for meal prep, or (more unlikely) you just didn't feel like eating them right out of the oven—you can use the oven to reheat the pizzas! 350f for 5 minutes will do the trick.

How to make english muffin pizzas crispy?

A couple of simple strategies help me get these to a solid level of crispy:

  • Pre-bake the English muffin in the oven before adding the toppings (see instructions)
  • Finish off in the broiler
  • Don't overdo it on the sauce!

You could also try making these in an air fryer—I haven't yet experimented with this. The truth is, I like a balance of chewy and crispy, so I'm not trying to have the thing get too crunchy!

    Made this for the second day in a row! I work from home and crave a warm meal for lunch somedays when lunchmeat isn't cutting it. So quick, easy and light! Would be really fun for a family to make together as well!
