Homemade Star Crunch Bars

- 3 cups crispy rice cereal 82 grams
- ½ cup dark chocolate chips 112 grams
- 1 tablespoon coconut oil 14 grams
- ½ cup caramel bits 96 grams
- 2 tablespoon milk
Place a piece of parchment paper in a 9 x 9 baking dish. Set aside.
Add the crispy rice cereal to a large mixing bowl.
In a separate microwave-safe bowl, add the caramel bits and milk. Place in the microwave for 3 minutes, until caramel bits are melted. Stir until mixture reaches a smooth consistency.
In a small microwave-safe bowl, add the dark chocolate chips and coconut oil. Place in the microwave for about 2 minutes, stirring every 30 seconds until completely melted.
Pour the melted chocolate and caramel into the bowl over the crispy rice cereal. Stir gently until the cereal is completely coated.
Pour the coated crispy rice mixture into the pan with parchment paper.
Place in the freezer for 30 minutes. Cut into pieces & enjoy!
