Homemade Star Crunch Bars

Ingredients

  • 3 cups crispy rice cereal 82 grams
  • ½ cup dark chocolate chips 112 grams
  • 1 tablespoon coconut oil 14 grams
  • ½ cup caramel bits 96 grams
  • 2 tablespoon milk

Instructions

  • Place a piece of parchment paper in a 9 x 9 baking dish. Set aside.
  • Add the crispy rice cereal to a large mixing bowl.
  • In a separate microwave-safe bowl, add the caramel bits and milk. Place in the microwave for 3 minutes, until caramel bits are melted. Stir until mixture reaches a smooth consistency.
  • In a small microwave-safe bowl, add the dark chocolate chips and coconut oil. Place in the microwave for about 2 minutes, stirring every 30 seconds until completely melted.
  • Pour the melted chocolate and caramel into the bowl over the crispy rice cereal. Stir gently until the cereal is completely coated.
  • Pour the coated crispy rice mixture into the pan with parchment paper.
  • Place in the freezer for 30 minutes. Cut into pieces & enjoy!

Notes

  • To meal prep: Make according to instructions. Store in an airtight container in the freezer. 1 serving is 18 grams or 1/16 of the recipe.
  • To make GF: Use gluten-free crispy rice cereal.
  • To make DF: Use dairy-free chocolate & almond milk.
