McGriddle Bites

Ingredients

  • 2 cups pancake mix (I use a protein pancake mix)
  • 1.5 cups water
  • 16 oz turkey sausage cooked
  • cup cheddar cheese shredded
  • ¼ cup maple syrup (I use sugar free version but any kind is okay)

Instructions

  • Preheat oven to 350 degrees.
  • Spray muffin tin with cooking spray and set aside.
  • Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
  • Cook sausage in a skillet until completely brown.
  • Mix the sausage pieces, syrup, and cheese into the batter and stir.
  • Pour batter evenly across the 12 spaces of the muffin tin.
  • Bake at 350 for about 25 minutes, or until middle is cooked through.
  • Enjoy with a side of syrup!
