Gather these 5 simple ingredients, and you'll be ready to go:
- pancake mix
- water
- turkey sausage
- cheddar cheese
- maple syrup
How to make McGriddle bites
Follow these instructions for a very yummy breakfast:
- Preheat oven to 350 degrees.
- Spray muffin tin with cooking spray and set aside.
- Combine pancake mix and water in a large mixing bowl. Mix to combine. (Don’t over-mix or the pancake batter won’t rise well!)
- Cook sausage in a skillet over medium-high heat until completely brown.
- Mix the sausage pieces, syrup, and cheese into the batter and stir.
- Pour batter evenly across the 12 spaces of the muffin tin.
- Bake at 350 for about 25 minutes, or until middle is cooked through.
- Enjoy with a side of syrup!

- Pancake Mix: I use a protein pancake mix, but any pancake mix you have on hand will do!
- Turkey sausage: Instead of turkey sausage, you could use pork or chicken sausage.
- Cheddar Cheese: Use your favorite shredded cheese! Cheddar cheese is just the original cheese used on a McDonald's McGriddle.
- Maple Syrup: I use sugar free version, but any kind is okay.
How long do McGriddle bites last in the fridge?
I will store these in an airtight container in the fridge for up to 5 days. Just heat them up in the microwave the morning you want them!
You can eat these pancake bites hot or cold! They taste great both ways.

How to meal prep this recipe
This is a great recipe to meal prep so you have a quick breakfast ready to go during a busy week. First, make the recipe according to the instructions. After the bites have cooled, place them in an airtight container and store in the fridge for up to 5 days.
Additionally, put the bites in a freezer bag and store in the freezer for 30 days. You can warm them up in the microwave from frozen. Simply place a damp paper towel over the bite when microwaving so that the bites don't get too dried out.
