McGriddle Casserole

An easy breakfast casserole packed with protein, syrup, pancakes and sausage. The McGriddle Casserole is the best way to get up and start your day!

Ingredients

  • 2 cups pancake mix I use a protein pancake mix
  • 1.5 cups water
  • 16 oz turkey sausage cooked
  • cup cheddar cheese shredded
  • ¼ cup maple syrup I use sugar free version but any kind is okay
  • for extra protein: use milk instead of water, add 1 egg

Instructions

  • Preheat oven to 350 degrees.
  • Spray large casserole dish with cooking spray and set aside.
  • Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
  • Cook sausage in a skillet until completely brown.
  • Mix the sausage pieces, syrup, and cheese into the batter and stir.
  • Pour batter evenly into the casserole dish.
  • Bake at 350 for about 25 minutes, or until middle is cooked through.
  • Enjoy with syrup!
