Ingredients

  • 12 ounces cauliflower rice
  • 1 lb lean ground beef
  • ½ onion
  • 1 bell pepper
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup shredded mexican cheese
  • Toppings: cilantro, lime, salsa, avocado, sour cream

Instructions

  • Heat a skillet over medium high heat.
  • Add olive oil, peppers, and onions to a skillet.
  • Add the ground beef and cook until brown, or internal temp reaches 165 degrees.
  • Add packet of taco seasoning. Stir well.
  • Add the cauliflower rice and diced tomatoes, stir, and cook for about 8 minutes, until the rice is tender.
  • Cut the heat.
  • Sprinkle the cheese on top.
  • Cut the heat and cook for 5 minutes.
  • Top with avocado, sour cream, jalapenos, limes, or cilantro.
  • Enjoy!
