- 12 ounces cauliflower rice
- 1 lb lean ground beef
- ½ onion
- 1 bell pepper
- 1 packet taco seasoning
- 1 can diced tomatoes
- 1 cup shredded mexican cheese
- Toppings: cilantro, lime, salsa, avocado, sour cream
Heat a skillet over medium high heat.
Add olive oil, peppers, and onions to a skillet.
Add the ground beef and cook until brown, or internal temp reaches 165 degrees.
Add packet of taco seasoning. Stir well.
Add the cauliflower rice and diced tomatoes, stir, and cook for about 8 minutes, until the rice is tender.
Cut the heat.
Sprinkle the cheese on top.
Cut the heat and cook for 5 minutes.
Top with avocado, sour cream, jalapenos, limes, or cilantro.
