Mexican Cauliflower Rice

I absolutely love Mexican food! I wanted to try to make my own low-carb version of Spanish rice. This recipe is a great way to change up traditional Mexican rice. 

If you are a fan of Mexican food, you absolutely have to check out this dish. In place of rice, it uses fresh cauliflower rice. The whole family is going to love this low-carb, high-protein meal. It is full of fresh vegetables and the flavor is out of this world. 

This dish is perfect for your next taco night. You could use the mixture in tacos or burritos, or create do-it-yourself burrito bowls. This recipe is full of flavor, so filling, and you won't be missing that white rice one bit!

Mexican cauliflower rice ingredients

Head to the grocery store to gather these ingredients and you'll be ready to make this low-carb Mexican cauliflower rice.  

  • cauliflower rice
  • ground beef
  • onion
  • bell pepper
  • taco seasoning
  • diced tomatoes
  • shredded Mexican cheese
  • Toppings: cilantro, lime, salsa, avocado, sour cream

How to make Mexican cauliflower rice

Follow these instructions and make this one of your new Mexican favorites: 

  • Heat a skillet over medium-high heat.
  • Add olive oil, peppers, and onions to a skillet.
  • Add the ground beef and cook until brown, or internal temp reaches 165 degrees.
  • Add packet of taco seasoning. Stir well.
  • Add the cauliflower rice and diced tomatoes, stir, and cook for about 8 minutes, until the rice is tender.
  • Cut the heat.
  • Sprinkle the cheese on top.
  • Cut the heat and cook for 5 minutes.
  • Top with avocado, sour cream, jalapenos, limes, or fresh cilantro.
  • Enjoy!

Mexican cauliflower rice substitution ideas

There are plenty of substitution for this healthy dinner:

  • Cauliflower rice: White rice, brown rice, and any kind of regular rice will suffice. I use store-bought cauliflower rice. You could make your own cauliflower rice, it's just more time intensive!
  • Ground Beef: Instead of ground beef, use chicken, shrimp, or any sort of protein. 
  • Cheese: I use shredded cheese, but you could use any type of cheese. Cotija cheese would compliment the flavors in this recipe so well. 
  • Add extra veggies: Feel free to pack in the veggies! Add extra corn, bell peppers, or even add your favorites that aren't in the recipe!

How long does Mexican Cauliflower Rice last in the fridge?

This Mexican cauliflower rice will last in the fridge for up to 5 days. This makes it a great recipe for meal prep. 

Make sure you store the leftovers in an airtight container. When you're ready to eat some, heat it up on the stove top or in the microwave.

There are so many foods that would taste great alongside a Mexican cauliflower rice skillet. My first thought of a perfect side dish are some refried beans or black beans. 

Another great side dish would be some chips and salsa. Fresh fruit like watermelon or pineapple would be delicious.

How healthy is Mexican Cauliflower Rice?

Healthy is a subjective term and means different things to different people. "Healthy" all depends on your body, your health goals, and your exercise habits. This easy Mexican cauliflower rice recipe is full of wonderful foods that have so much to offer to you and your body. 

For example, bell peppers are rich in antioxidants and vitamins. One medium-size pepper has upwards of 100% of your daily value of Vitamin C! If you happen to be watching carbs, this is a perfect low carb option for dinners and lunches! 

How do you keep cauliflower rice from getting soggy?

There are so many wonderful cauliflower rice recipes out there! A common question is what can I do to keep cauliflower rice from getting soggy? 

The best way to do this is to remove the excess moisture as you cook. I would recommend draining the ground beef of its fat before adding the cauliflower rice for this recipe. If you're using frozen cauliflower rice, cook directly from frozen.

Is cauliflower rice better for you than rice?

While generally cauliflower rice is considered and healthier alternative to traditional rice, it's not a totally black and white issue. There is nothing wrong with enjoying white rice every once in a while! 

For those watching their carb intake, it is a very sensible swap. Cauliflower rice is lower in calories and carbohydrates!

When I went to find the answer to this question, I was not expecting the answer! According to Google, the inventor of cauliflower rice is none other than Ben Ford, the son of actor Harrison Ford. You learn something new every day!
