Ingredients

  • 2 lbs chicken tenderloins
  • 10.5 oz fat free cream of chicken soup (1 can)
  • 1 cup plain nonfat greek yogurt
  • 8 oz neufchatel cheese (1 block)
  • 1 oz ranch seasoning packet
  • ½ cup shredded cheddar cheese
  • 10 Ritz crackers crushed on top

Instructions

  • Preheat oven to 350 degrees.
  • Grease a casserole dish.
  • Place chicken tenderloins in a single layer on the bottom of the casserole dish.
  • In a microwave-safe bowl, add the block of neufchatel cheese. Heat in the microwave for 30 seconds to soften. Remove and stir with a spoon.
  • Add greek yogurt, can of soup, and ranch seasoning to the bowl of softened neufchatel cheese. Mix until well combined.
  • Pour the mixture over the chicken and spread to coat evenly.
  • Add shredded cheese and crushed crackers to the top.
  • Bake at 350 degrees for 30 mins. Let cool for 10 minutes before serving.
