Sheet Pan Egg Breakfast Sandwiches

Equipment

Ingredients

  • 6 English muffins
  • 6 turkey sausage patties
  • 8 eggs
  • 1 cup cottage cheese
  • ½ cup shredded cheddar cheese
  • 6 slices cheese
  • Salt pepper, garlic powder

Instructions

  • Preheat oven to 350 degrees
  • Blend eggs, cottage cheese, & seasonings in a blender
  • Pour egg mixture over a small greased sheet pan
  • Sprinkle the eggs with both shredded cheeses
  • Bake at 350 for 20 minutes
  • Let cool completely & cut into 6 pieces
  • Cut the English muffins in half
  • Put a piece of egg and a turkey sausage patty on each English muffin
  • Top with a piece of sliced cheese
  • Put the sandwich together and wrap with aluminum foil
  • Store in a ziplock fridge and store in the fridge for a few days or the freezer
  • When it’s time to enjoy, heat up the sandwich and top with avocado and hot sauce

Notes

Substitution Ideas:
  • meat:  I like sausage or bacon, but you can use canadian bacon, turkey bacon, turkey sausage, or even two kinds of meat if you want additional protein
  • cheese: I like pepperjack or cheddar, but use whatever kind you like best! 
Sheet Pan Tips:
  • To make my sheet pan eggs recipe, I blend egg, cottage cheese and seasonings together to cook on a sheet pan. This makes the fluffy eggs and adds extra protein. HOWEVER, I've also made the sheet pan eggs with just eggs and a little bit of milk. Both ways work so pick whatever you prefer! Just make sure to use a really prepared pan (a LOT of cooking spray) to avoid anything sticking to the pan. If I'm making 6 sandwiches I'll use a small sheet pan but if I'm making 12 sandwiches I use a large sheet pan. 
  • A bonus tip is that if you decide to use bacon, cook bacon on a sheet pan at the same time as the eggs! To cook bacon in the oven I layer a sheet pan with aluminum foil, lay out the bacon, and cook at 350 for 20-30 minutes depending on how crispy you like the bacon.
