Sheet Pan Egg Breakfast Sandwiches
You know what never disappoints? A breakfast sandwich. They're hearty, delicious, and they always hit the spot. Bonus points because the prep is so easy AND you can easily customize the ingredients. Don't like bacon? Use sausage. Love a certain kind of cheese? Use that. But one way I've learned to speed up the meal prep process is to make sheet pan eggs. By making eggs on a sheet pan, it speeds up the meal prep process to make several sandwiches at once.
Of course there are so many awesome restaurants to pick up a breakfast sandwich, but this recipe is going to be a healthier and more affordable way to start the day with a high protein meal! With just a few ingredients, you'll have breakfast sandwiches ready to go for the week or even longer if stored in your freezer.
Breakfast sandwich ingredients
Gather these ingredients and you'll be ready to prepare these meal prep sandwiches:
- English muffins
- cheddar cheese or your favorite cheese
- your choice of breakfast meat (canadian bacon, ham, turkey bacon, sausage patties, turkey sausage, cooked bacon)
- eggs
- cottage cheese
- milk
- salt & pepper, garlic powder
- optional things to add: bell peppers, avocado, onion
Breakfast sandwich substitution ideas
The awesome thing about these breakfast sandwiches is that there are so many substitution ideas!
- Bread: I use English muffins but you can use a biscuit or any type of bread
- Meat: I like sausage or bacon, but you can use canadian bacon, turkey bacon, turkey sausage, or even two kinds of meat if you want additional protein
- Cheese: Trust me, you want a slice of melted cheese on the sandwich! I usually do cheddar or pepper jack, but pick your favorite
- Toppings: add whatever you want, but my two favorite things to add are avocado and hot sauce

How to make sheet pan egg breakfast sandwiches
- Preheat oven to 350 degrees
- Blend eggs, cottage cheese, & seasonings in a blender
- Pour egg mixture over a greased sheet pan (use a quarter sheet pan if you're making a few sandwiches or a large sheet pan if you're going to double the recipe). To avoid sticking problems, use a lot of cooking spray!
- Sprinkle the eggs with shredded cheeses
- Bake at 350 for 20 minutes
- Let cool completely & cut into 6 pieces
- Cut the English muffins in half
- Put a piece of egg and a turkey sausage patty on each English muffin
- Top with a piece of sliced cheese
- Put the sandwich together and wrap with aluminum foil
- Store in a ziplock fridge and store in the fridge for a few days or the freezer
- When it’s time to enjoy, heat up the sandwich and top with avocado and hot sauce
Easy sheet pan eggs
To make my sheet pan eggs recipe, I blend egg, cottage cheese and seasonings together to cook on a sheet pan. This makes the fluffy eggs and adds extra protein. HOWEVER, I've also made the sheet pan eggs with just eggs and a little bit of milk. Both ways work so pick whatever you prefer! Just make sure to use a really prepared pan (a LOT of cooking spray) to avoid anything sticking to the pan. If I'm making 6 sandwiches I'll use a small sheet pan but if I'm making 12 sandwiches I use a large sheet pan.
A bonus tip is that if you decide to use bacon, cook bacon on a sheet pan at the same time as the eggs! To cook bacon in the oven I layer a sheet pan with aluminum foil, lay out the bacon, and cook at 350 for 20-30 minutes depending on how crispy you like the bacon.
Using sheet pans is my favorite way to make the ingredients because truly it is so easy and efficient!

How to meal prep breakfast sandwiches

How long do breakfast sandwiches last in the freezer?
These breakfast sandwiches will last in the freezer for 1-2 months (or up to a week in the fridge). This makes it a great recipe to use for meal prep as well, especially if you plan to freeze. I have made these for postpartum and friends to have several stocked in my freezer!
How to store breakfast sandwiches in the freezer
Wrap each sandwich individually in tin foil or parchment paper. Place the wrapped muffins in a sealed gallon ziploc or reusable bag and place in the freezer. If you're enjoying the sandwiches right away, go ahead and heat up in the oven. If you'll be consuming the sandwiches within 5 days, assemble the same way but no need to freeze them.
When you are ready to have one of your sandwiches, use the instructions below to reheat based on your preferred method.

How do you reheat breakfast sandwiches?
From the fridge:
- In Microwave: Heat for 1 minute.
- In Oven or Toaster Oven: Place in the oven at 350 for about 10 minutes.
- In Air Fryer: Heat at 350 degrees for about 5 minutes.
- Overall, make sure the meat is warm and the cheese melts!
From frozen:
- In Microwave: Thaw in the fridge overnight. Wrap in a paper towel and place in the microwave for 1 minute. Flip and heat on other side for 30 seconds. If still frozen, cook for another 30 seconds until warmed all the way through.
In Oven or Toaster Oven: Thaw in the fridge overnight. Place in the oven at 350 for about 10-15 minutes or until warmed all the way through. - In Air Fryer: Separate sandwich (remove top bun) and reheat in air fryer on 375 degrees Fahrenheit for 5-7 minutes.
How long do breakfast sandwiches last in the fridge?
These breakfast sandwiches will last up to 5 days in the fridge. If you and your family will finish these within the week, you don't need to freeze them.
When storing in the fridge, wrap the sandwiches as instructed and then put them in a large ziploc or airtight container. They'll be ready when you are!
