Inspired by street corn and Mexican corn dips, this corn-forward snack uses a creamy mayo-yogurt mix to form the base of the dip and a mixture of spices to draw out some delicious flavor.

- 3 cans fire roasted corn
- 1 can diced tomatoes & green chiles
- ½ cup greek yogurt
- ½ cup mayo
- 1 cup cheddar cheese
- ½ tsp paprika
- ¼ tsp cayenne
It might not seem like mayonnaise and greek yogurt would play nicely together, but they team up so well in this dip. The greek yogurt provides a real zingy, tangy flavor while the mayo adds some depth and creaminess.

How long is homemade dip good for?
If you seal this dip in an airtight container, it'll easily last in the fridge for 5-7 days. Greek yogurt is the most "volatile" of the ingredients, if you can call it that. If you use it fresh, though, you might have this dip for up to two weeks! Not that it'll last that long...

The instructions or ingredients should mention that the tomato’s and corn should be drained. I drained all the corn but not the tomato’s and it was too much liquid.

Hi Cindy, so happy to hear you enjoy this recipe! I don't have the information about grams per serving. This recipe makes 10 servings so my recommendation is to weight the entire recipe, divide by 10, and that number will give you the grams per serving. I hope that helps!
