  • nonfat plain greek yogurt
  • lime

Follow these instructions for a quick, delicious meal for the whole family!

  • Start by heating a large skillet over medium-high heat. Add ground turkey. Cook until browned, about 7 minutes. Drain excess grease. Add taco seasoning and mix well. Set aside.
  • Wash and chop all veggies for the bowls. Set aside.
  • In a blender, add sauce ingredients and blend until smooth and creamy.
  • Lay out 4 meal prep containers.
  • Assemble layers of all ingredients, evenly distributing into the containers. Start with greens, rice, turkey, black beans, corn, peppers, tomatoes, cilantro, and any additional toppings. Drizzle with sauce.

  • Ground turkey: Ground turkey lowers the fat content of this recipe, but ground beef would also taste great in this recipe. You could also use ground chicken or ground pork! Whatever you like best and whatever you have on hand.
  • Taco seasoning: I use low-sodium taco seasoning packets. You could use a regular taco seasoning packet or even make your own at home. Here is the recipe I use for my own homemade seasoning.
  • Brown rice: Instead of brown rice, use traditional white or a Basmati rice. You could also sub a cauliflower rice for even more vegetables!
  • Grape tomatoes: If you don't have fresh grape tomatoes on hand, you could chop up some beefsteak or Roma, or even use a can of diced tomatoes.
  • Optional toppings: Some suggestions I've thought of are salsa, Greek yogurt, sour cream, hot sauce, tortilla chips, jalapeños, or cheese!

This recipe will last in an airtight container in your fridge for up to 5 days, which makes it great for meal prep.

This recipe is absolutely perfect for meal prep! When using this recipe for meal prep, just separate the recipe out evenly into 4 containers.

  • 1 lb ground turkey, 93% lean (16 oz)
  • 1 packet taco seasoning, low sodium
  • 1.5 heads romaine, chopped (350 grams)
  • 1 cup brown rice, cooked (202 grams)
  • 1 can black beans (425 grams)
  • 2 bell peppers, diced (400 grams)
  • 1 can corn, drained (432 grams)
  • 1 pint grape tomatoes, halved (285 grams)
  • ½ cup cilantro (8 grams)
  • ½ lime, cut into 4 wedges
  • Optional toppings: salsa, greek yogurt, sour cream, hot sauce, tortilla chips, jalapeños, cheese, etc.
