What ingredients do I need?

Like most of my recipes, this one uses fewer than 10 ingredients! Here's what you'll need:

  • Kodiak Cakes Power Cakes Mix – Kodiak Cakes has so many mixes that can substitute as flour. I love the flavor, the nutritional components, and how easy it is to incorporate the mix into recipes. I use the classic Buttermilk flavor for this recipe, but you could use whatever mix you like the best!
  • Bananas - It wouldn't be chocolate chip banana muffins without bananas! Make sure the bananas you use are really ripe! You'll still get all of the awesome nutrition benefits of bananas like potassium, vitamins, and fiber.
  • Honey - This recipe uses honey as a way to sweeten the muffins instead of sugar. If you don't have honey, maple syrup would work the same way!
  • Vanilla - I'm a firm believer that every baked good needs vanilla. This recipe uses about 1 tbsp to add the incredible vanilla flavor.
  • Unsweetened almond milk - This is the kind of milk I keep on hand, but any kind of milk you prefer will work for this recipe.
  • Greek yogurt - A little bit of greek yogurt will add creaminess and the moist texture you want in every bite of muffin. It's also an ingredient that will add some extra protein!
  • 1 egg - Cracked, added, and stirred into the mix.
  • Chocolate chips - Let's be real, muffins are better with chocolate chips! I like to use mini chocolate chips so that there are more and chocolate is added into every bite. You can use dark, milk, or whatever kind you like best.

What substitutions can I make?

I haven't tried all of these substitutions, but there are a few you can try!

  • Kodiak Cakes Power Cakes Mix – I love Kodiak Cakes Mix but you could likely use another kind of mix and it would work in a similar way.
  • Bananas - These are a key ingredient! I wouldn't skip them.
  • Honey - If you don't have honey, maple syrup would work the same way.
  • Unsweetened almond milk - This is the kind of milk I keep on hand, but any kind of milk you prefer will work for this recipe.
  • Chocolate chips - Let's be real, muffins are better with chocolate chips! I like to use mini chocolate chips so that there are more and chocolate is added into every bite. You can use dark, milk, or whatever kind you like best. You can also add more than ½ cup if you'd like.

  • Use a fork to mash bananas in a large mixing bowl.
  • Add the wet ingredients to the bowl with the bananas. Mix well.
  • Add the dry ingredients to the bowl. Mix well.
  • Stir in half of the chocolate chips.
  • Grease a muffin tin with cooking spray.
  • Scoop the batter into the muffin tin.
  • Sprinkle the remaining chocolate chips on top of the muffins.
  • Bake at 350 for 20 minutes or until cooked through.
