Marry me chicken pasta ingredients

Hit the grocery store and make this new family favorite with these simple ingredients: 

  • boneless chicken breast
  • chickpea pasta
  • sun-dried tomatoes
  • spinach
  • reduced fat cream cheese 
  • grated parmesan cheese
  • low sodium chicken broth
  • half & half or heavy cream
  • olive oil
  • garlic cloves
  • paprika
  • oregano
  • red pepper flakes
  • Salt and black pepper to taste

How to make marry me chicken pasta

This creamy pasta dish is so delicious! Follow these instructions to make it today. 

  • Make pasta according to instructions.
  • While the pasta is cooking, chop chicken breast into 1-inch, bite-size pieces.
  • Heat olive oil in a large skillet over medium-high heat.
  • After around 30 seconds, add the chicken pieces to the skillet. Allow to get to golden brown color without moving them for about 4 minutes.
  • Flip the chicken pieces and cook for another 4 minutes. Cook until internal temp is 165.
  • Remove chicken from pan and cut heat to low.
  • Add the garlic and sundried tomatoes to the skillet and cook for 1-2 minutes.
  • Add the reduced fat cream cheese to the skillet. Use the spatula to press down and help the cheese melt, about 2 minutes.
  • Pour the chicken broth, cream, parmesan, salt and pepper, paprika and oregano into the skillet. Cut to medium-low heat and cook for about 5-6 minutes, until the cream sauce thickens.
  • Add spinach to the skillet. Stir and let the spinach wilt, about 2-3 minutes.
  • Stir in the cooked pasta and cooked chicken. Mix well.
  • Top the pasta with parmesan cheese and red pepper flakes.
  • Enjoy!

Marry me chicken pasta substitution ideas

This creamy chicken pasta is absolutely delicious as is, but if your diet or palate demands it, try these easy substitutions:

  • Pasta: I use a chickpea pasta to add protein to this recipe, but you can use whatever pasta you have around the house. I do suggest a penne pasta. 
  • Cream cheese: My cream cheese of choice is a reduced fat variety. You could use a normal full fat or even dairy-free if needed.
  • Grated Parmesan cheese: Substitute for a dairy-free Parmesan if need be. 
  • Chicken broth: I use a low sodium chicken broth but any chicken stock you have at home will be just fine. You could even substitute bone broth to add more protein to the dish. 
  • Half & half or heavy cream: There is a dairy-free substitute for heavy cream! 
  • Red pepper flakes: If you aren't the biggest fan of a bit of spice, I wouldn't add the red pepper flakes at the end.
  • Optional: Adding some chopped fresh basil as you're ready to serve would be incredibly delicious. 

How long does marry me chicken pasta last in the fridge?

This scrumptious creamy pasta recipe will last in the for up to 5 days. When you're ready to store your leftovers, simply place in an airtight container and leave in your fridge for up to 5 days. 

This is a great dish to prepare to take to someone as well. Whether they've just had a baby, had a medical emergency, or are just in a place to need some extra love, they will love this pasta dish.

How to meal prep this recipe

To use this recipe for your weekly meal prep, simply making according to the instructions. When you're done making the dish, separate into equal portions and place in 6  airtight containers. 

Whenever you're ready, take out a serving and warm in the microwave. I used one minute increments until the pasta has reached my desired temperature. 

What goes well with marry me chicken pasta

​This pasta is just like all the others in that you cannot go wrong with a good side salad and some crusty bread. When I serve pasta I prefer to make a garlic butter bread in my oven to serve alongside. I also tend to make a simple salad, too!

    My family really enjoyed this! I used a gluten free pasta since I should do gluten free and can’t eat chickpea. This was rather quick to make and a definite family hit. I will make this again.
