These easy street corn chicken tacos are flavorful and ready in 20 minutes! Packed with grilled chicken, a creamy street corn salsa, and heated tortillas, this meal will be your new favorite dinner recipe!

What are street corn chicken tacos?

What are street corn chicken tacos? Only your new favorite dinner! Or a new recipe to try the next time you celebrate Taco Tuesday. 

I was introduced to street corn when I lived in Texas and it's SO delicious. Street corn is a popular Mexican food that is typically a grilled corn on the cob topped with a crema, chili powder, lime juice, and cotija cheese. I'm telling you, it's SO tasty. 

Inspired by Mexican street corn, this recipe uses a street corn mixture (deconstructed off the cob, but still including similar ingredients) to create a delicious grilled chicken taco. 

Street corn chicken tacos

To enjoy perfect mexican street corn chicken tacos, you'll start with with corn or flour tortillas. I recommend heating up on the stove so there's warm tortillas as the base! 

The tortilla will be topped with a flavorful grilled chicken. I sliced chicken breast and added to a large bowl with a packet of taco seasoning. I used a seasoning packet to make things extra easy but you could absolutely use your own combination of seasonings. Cook in a large skillet until cooked completely.

The mexican street corn salad is the mixture on top of the chicken. It's made with corn, mayo, seasonings, fresh lime juice, and you can customize this to your liking. 

The very last addition will be the toppings, and I recommend avocado and fresh cilantro. 

These are the perfect weeknight dinner the whole family love but also work for meal prep!

Street corn chicken tacos ingredients

To make street corn chicken tacos, you'll need some simple ingredients. 

For the chicken:

  • 1 lb chicken (Boneless, skinless chicken breast or chicken thighs will work for this recipe)
  • 1 packet taco seasoning (You could also make your own seasoning mixture, I used a packet to keep things extra easy)

For the street corn mixture:

  • 1 can roasted corn (I use a can of roasted corn because that's about all the energy I can give. But if you wanted to elevate this recipe, you could grill your own fresh corn and cut off the cob, and I bet that would be delightful!)
  • 1.5 tablespoon Greek yogurt (Typically a street corn recipes only uses mayonaise or sour cream, but I cut the mayo with greek yogurt to make things a bit more low calorie. You can totally do all mayo or a mixture, whatever you prefer!)
  • 1.5 tablespoon Mayo 
  • 1 tablespoon Garlic 
  • ¼ cup cilantro 
  • 1 tablespoon Lime juice (I used fresh lime juice from 1 lime, but lime juice from a bottle works great as well)
  • ¼ cup cotija cheese 
  • ¼ teaspoon paprika 
  • ¼ teaspoon sea salt 

For the base:

  • Mini flour tortillas

For the toppings:

  • Tomato (cut into pieces)
  • Avocado (cut into pieces)
  • Cilantro (chopped into pieces)
  • Other ideas: jalapenos, slaw, etc.

How to make a street corn chicken tacos

It's so easy to make these street corn chicken tacos! It's basically making the chicken, the street corn, and adding toppings. Here's how to do it: 

  • Heat a large skillet on medium-high heat. Add a little bit of avocado oil or olive oil.
  • ​Cut chicken breast into small pieces and place in a large bowl. Add a packet of taco seasoning and mix until chicken is coated.
  • ​Grill chicken in the skillet until cooked completely (or until internal temperature reaches 165 degrees).
  • ​Make the creamy mexican street corn salad by adding the corn, seasonings, cotija cheese, greek yogurt and mayo to a bowl. Stir well.
  • ​Heat another skillet and use to warm up tortillas.
  • ​To build the tacos, layer the grilled chicken, street corn, and add additional toppings. Avocado and cilantro are perfect on top.
  • ​Enjoy!

Street corn chicken tacos substitution ideas

The beautiful thing about these chicken street tacos is that there are so many ways you can customize them to make them using what you like and already have in your fridge.

Here's some substitution ideas!

  • Chicken breasts - Instead of boneless skinless chicken breasts try chicken thighs, ground chicken or even rotisserie chicken! And if chicken isn't your favorite, you could totally use pork or beef 
  • Tortillas - I use flour tortillas but you could also use corn tortillas 
  • Corn - I use a can of roasted corn because that's about all the energy I can give. But if you wanted to elevate this recipe, you could grill your own fresh corn and cut off the cob, and I bet that would be delightful!
  • Mayo & Greek Yogurt combo - Typically a street corn recipes use mayonaise and/or sour cream, but I cut the mayo with greek yogurt to make things a bit more low calorie. You can totally do all mayo or a mixture, whatever you prefer!
  • Cojita cheese - This is typically used in street corn recipes but you can use any kind of cheese
  • As far as toppings go, add anything that sounds good to you! Add extra sauces if you want too like an avocado cream sauce, homemade salsa or hot sauce. Honestly the flavor is really great without these but it'll take it up a notch!

How long do street corn chicken tacos last in the fridge?

These delicious street corn tacos will last up to 5 days in the fridge. Make sure you store the leftovers in an airtight container before putting in the fridge. 

For best results, store the tortillas, chicken, and street corn in separate airtight containers. When you're ready to enjoy, simply reheat the chicken and add the street corn on the tortillas.

This recipe would be a perfect meal prep to make for easy weeknight dinners. Make the chicken and street corn mixtures and store in separate containers. Whenever you're ready to enjoy, heat up the chicken and add the street corn on top.
